I am so behind on things that I honestly don’t even know what to say to you guys anymore! *facepalm 🤦♀️ I mean, I used to be 3 months behind but now I have graduated to a whole new level, 6 months-ish! *facepalm and *ashamed 🤦♀️ 😨
By now you already kinda know that, don’t ya!?
I sure need 48 hrs in a day, but that’s a different problem to deal with for a different day!! But for now, I am trying to make do with the same 24 hrs we all get in a day! (by fol here).
Anyho, what I meant to say is that we (@Kathy and I) made this Roasted Butternut Squash Flatbread Pizza recipe at her home back in September (or was it October? I can’t even remember anymore) in hopes to share a few Fall-inspired recipes.
But as usual, I never got around to posting this Roasted Butternut Squash Flatbread Pizza Recipe on the blog.
So I figured now would be the perfect time to share the recipe (hey better late than never) cuz there are still 2 more exciting events ahead of us (i.e. before Spring makes its appearance, CAN.NOT.WAIT).
Superbowl Sunday (personally, not something that gets me excited, but it’s hubby’s fave and I am guessing it is most of the world’s favorite Sunday too), and then there is my favorite, Valentine’s Day (check out all things Valentine’s Day here).
Though you don’t need any special occasion to make this Roasted Butternut Squash Flatbread Pizza, it is so easy to make that it can literally be put together on any weekday night for dinner, or better yet for your date-night-in on a Friday night with your special someone ( #parentlife talking, haha).
PRO TIP: Costco (and I am sure most other grocery stores) sells cubed butternut squash during the season. So you can buy them to cut down on prep time. The ones from Costco are so juicy and tasty!
And the best part is that you can make these several different ways…
VARIATIONS & SUBSTITUTIONS
- Base – use any other flatbread or pizza base. Make it healthier by using whole wheat or whole-grain naan/flatbread.
- Spread – use pesto, hummus, ricotta cheese, etc. You can also make a paste of roasted vegetables to use as a spread.
- Veggies – Brussel sprouts, figs, greens, peppers, cherry tomatoes, zucchini, etc.
- Beets make for a great alternative for Valentine’s day or throw in some pomegranate for some pop of color 🙂
- Additional toppings – goat cheese, burrata, cherry tomatoes, dried cherries, different herbs, etc.

EQUIPMENT NEEDED TO MAKE BUTTERNUT SQUASH FLATBREAD PIZZA

Servings: 2 | Prep Time: 15 MINS | Cook Time: 30 MINS
INGREDIENTS NEEDED TO MAKE BUTTERNUT SQUASH FLATBREAD
- 2 Naan Bread Crusts
- 2 cups Butternut Squash, sliced (or you can cube them too)
- 2 Cloves of Garlic, skin removed & finely chopped (optional)
- 1 Onion, thinly sliced
- 2 sprigs Sage
- 2 tbsp Olive Oil
- 1 tbsp Butter
- 1 tbsp Honey (or Maple Syrup, Or Brown Sugar)
- 1/2 cup Parmesan Cheese, shaved
- 1/2 cup Goat Cheese, crumbled (optional)
- 1/4 cup Pine Nuts
- Balsamic Glaze, for drizzle
- Pepper, freshly ground
- Salt, to taste
- Red Chili Flakes, (optional)
INSTRUCTIONS:
- Preheat oven to 400 degrees.
- Wash, peel the skin & slice butternut squash and finely chop garlic cloves.
- Spread cubed butternut squash on a baking sheet, drizzle olive oil, add salt, pepper, and red chili flakes. Toss to coat nicely. Add some sage for additional flavor.
- Bake for 15-20 minutes or until butternut squash is soft and remove from the oven.
- In the meantime, make caramelized onions. Heat a skillet on medium-high, add butter and once it melts add thinly sliced onions. Stir frequently and once the onions start to soften add honey (or brown sugar or butter). Add a little water to keep the onions from drying out as they cook. Takes about 10-12 minutes to caramelize the onions.
- Place the naan on the same baking sheet, lightly oil the surface of naan, and top it with roasted butternut squash, caramelized onions, and scatter cheese, sage and pine nuts.
- Put the naan bread in the oven and bake until they slightly brown and the cheese starts to melt. It takes about 5-8 minutes.
- Once done, take it out of the oven and drizzle balsamic glaze on top.
- Slice and serve immediately.
